Hey there, foodies! Have you ever wondered about the art of making those scrumptious shrimp fried noodles you’ve savored at restaurants? Well, wonder no more! Let’s dive deep into this delicious dish and bring the magic to your kitchen.

Shrimp Fried Noodles, an absolutely delicious and harmonious blend of textures and flavors, are often the talk of many dinner tables. But why?


Why Shrimp Fried Noodles

Stir fry noodles recipe is extremely easy, no cooking skill is needed, type of recipe. It cooks quickly, and only takes about 15 minutes to prepare and cook, which means this should make weeknight dinner preparation extremely easy.

You could include almost any ingredients you wanted. Of course, the star of the show will be shrimp but do not hesitate to include any favorite noodle ingredients you enjoy.

The ingredients used in this recipe are protein-packed with lots of veggies.

These noodles, with the subtle hint of the ocean from the shrimp, combined with the al dente texture of the noodles, create a symphony in the mouth. They’re the perfect combination of taste and texture, making them an instant hit!


The Origins of Shrimp Stir Fry with Noodles

The story goes back to the vibrant streets of Southeast Asia, where street food vendors masterfully combine local produce to create dishes that appeal to all senses. The journey of shrimp fried noodles began here and now is relished worldwide.


Ingredients Needed

Main Ingredients

  1. Noodles (1 lb) – You could use any noodles you like. For example, you could use egg noodles, udon, Italian pasta like spaghetti, or even some instant ramen noodles. We use some thin egg noodles in this recipe.
  2. Shrimp (1/2 lb) – You use any shrimp you have at home, including raw, frozen, and even cooked shrimp. Any size could be used. Shrimp is a lean protein that I often incorporate in my meals.
  3. Vegetables (as much or as little as you like) – Please use whatever vegetables you have on hand, it’ll probably work out pretty well. Some of the popular choices include onions, bell peppers, carrots, snow peas, broccoli florets, celery, baby corn, and/or bok choy. I used napa cabbage for mine, which is one of my favorite choices.
  4. Eggs for Extra Protein (4 large) – I like to pack my dishes with more good protein.
  5. Scalliion – optional for garnish

Stir Fry Sauce Ingredients

  1. Soy Sauce (2 tbsp)
  2. Dark Sauce (1 tbsp) – optional for coloring
  3. Oyster Sauce (2 tbsp)
  4. Sugar (1/2 tsp)
  5. Chicken Bouillon Powder (1/2 tsp) – optional for deeper savory flavor
  6. Water (2 tbsp)

Equipment Necessary

  1. Large wok or large non-stick skillet (for stir fry)
  2. Large pot (for cooking noodles)
  3. Spatula
  4. Tongs or chopsticks

Step-by-Step Cooking Instructions

Prepare Ingredients

  • Shrimp – start by preparing shrimp based on the type of shrimp you are using.
    • Raw (fresh or frozen) –
      • Run raw shrimp under cold tap water (this step also gives raw shrimp a crunchy texture after it’s cooked).
      • Pat dry with a paper towel.
      • Clean shrimp by removing veins, shells, and tails as needed. Cut into bite-size if that’s what you prefer.
      • Sprinkle a little salt to marinate.
      • Optional – Add a sprinkle of cornstarch so the cooking process can stay dry.
    • Cooked (frozen) – soak in cold water to thaw.
  • Eggs – beat 4 eggs in a bowl.
  • Vegetables – clean and julienne your vegetables into long strips. This shape pairs well with the noodles. In my example, I shredded cabbage into long strips.
  • Noodles – Cook your choice of noodles based on package instructions with cook-time shortened slightly by approximately 1 minute. No need to add any salt to the boiling water since we will prepare a sauce for the stir-fried noodles. The par-cooked noodles will finish cooking when you stir fry the noodles in the sauce. Drain and set aside.

Prepare Stir-Fry Sauce

Simple, mix all the sauces well in a mixing bowl! Be sure to taste to your preference.

Get Cooking!

  • Scramble eggs – heat up a large wok or skillet and add cooking oil. Pour in the beaten egg mixture and scramble until it’s 90% cooked. Set aside for later. Pro Tip: If you are using a wok, heat it up on high until slightly smoking before adding oil, then turn the heat down to low.
  • Shrimps – if you are using raw shrimps, add shrimp to the wok and saute them in a single layer for 1 to 2 minutes per side or until they just turn pink. If you are using cooked, you only need to warm up the shrimp until hot.
  • Vegetables – saute until softened to your preference. Pro Tip: If you are using vegetables with high water content, be sure to either cook until the excess liquid dries up or strain out the excess.
  • Noodles
    • Pro Tip: if using a wok, make sure it’s heated up until you see slight smoke coming up before you add cooking oil and the rest of the cooking should use high heat as well. This will prevent noodles from sticking to the wok.
    • Add oil and put par-cooked noodles into the wok or skillet. If you like your noodles to be a little crispy, spread the noodles into an even layer and let them fry for a minute before mixing.
    • Once preferred crispiness is achieved, mix noodles up with either tongs or chopsticks so the noodles will not break easily.
    • Add stir-fry sauce mixture to the wok and mix until the noodles are evenly coated. Pro Tip: add sauce to the side of the wok instead of pouring it onto the noodles, the sauce will be a little toasted which adds depth of flavor to your dish.
  • Add in the rest of the ingredients prepared before and mix until everything is evenly combined.
  • Finishing touches (optional) – after the heat is turned off, drizzle toasted sesame oil (1 tsp) on top and/or garnish with chopped scallion/toasted sesame, etc.

  • 1/2 lb Shrimp raw or cooked, frozen or fresh
  • 1/2 lb Vegetables any variety of your choice

  • 2 tbsp Soy sauce
  • 2 tbsp Oyster sauce
  • 1 tbsp Dark soy sauce Optional – for coloring
  • 2 tbsp Water
  • 1/2 tsp Sugar

Instructions

Prepare Main Ingredients

  • Shrimp – Clean shrimp by rinsing under cold water for 10 minutes. Peel, devein, and desh. Pat dry with paper towels. Based on your preference, sprinkle salt and/or cornstarch to marinate.
  • Eggs – Beaten well in large bowl.
  • Vegetables – Clean and julienne vegetable of your choice.
  • Noodles – Par-cook per package instruction minus 1 minute.

Prepare Stir-Fry Sauce

  • Mix all ingredients in a large cup and mix well until the sugar desolved.

Get Cooking

  • Heat up wok on high heat until slightly smoking. Add cooking oil to coat the entire surface.
  • Turn heat down to low.
  • Pour in egg mixture and scramble until it's 90% cooked. Set aside.
  • Turn the heat to high, add more cooking oil if needed.
  • Add shrimp to the wok and saute them in a single layer for 1 to 2 minutes per side or until they just turn pink. Set aside
  • Add vegetables to the wok and saute until it reaches your desired doneness. Drain any excess water. Set aside.
  • Add more cooking oil to the wok if needed, make sure it's on high heat.
  • Add par-cooked noodles to the wok. Let it fry without disturbing it if you like some crispy texture. Once preferred crispiness is achieved, mix noodles up with either tongs or chopsticks so the noodles will not break easily.
  • Add stir-fry sauce mixture to the wok and mix until the noodles are evenly coated. Pro Tip: add sauce to the side of the wok instead of pouring it onto the noodles, the sauce will be a little toasted which adds depth of flavor to your dish.
  • Add in the previously cooked ingredients and mix until everything is evenly combined.
  • Finishing touches (optional) – after the heat is turned off, drizzle toasted sesame oil (1 tsp) on top and/or garnish with chopped scallion/toasted sesame, etc.
