Ingredients
- Chicken – 2 lbs, it could be fresh or frozen. Dark meat is preferred for this recipe, like thigh, drumstick, etc.
- Garlic – 4 cloves, minced (fresh or bottled)
- Honey – 1/3 cup
- Soy Sauce – 1/2 cup
- Water – 1/4 cup
- Unsweetened ketchup – 3 tbsp (optional)
- Dry Oregano – 1 tsp
- Root Vegetables (optional) – a few potatoes or carrots
- Corn Starch 2 tbsp (optional) – if you want to thicken the sauce before serving

Cooking Instruction
- Browning the chicken (optional) – If you have time to spare, you could turn on the sauté function, wait until the display say “HOT”, put about 1 tablespoon of your preferred oil of choice into the pot, and brown the chicken (skin side down first if it’s not skinless). Brown in batches if needed. This step will give your dish more depth of flavor. If there are brown bits at the bottom of the pot after the chicken pieces are browned, use a spatula or wooden spoon to scrape them off.
- If you choose not to brown the chicken, then the first step is to put chicken pieces into the inner pot of the instant pot.
- Put in garlic, honey, soy sauce, ketchup if using, water, dry oregano into the pot.
- Mix everything well, be sure all the chicken is covered with the marinade.
- If you choose to cook root vegetables with it, put it on top of the marinated chicken.
- Close the lid of the instant pot.
- Set the venting knob to sealing (not venting).
- Set it on Manual High Pressure for 10 minutes.
- After it’s finishing cooking, natural release for 5 minutes (natural release means once the 10 minutes cook time is over, do nothing for 5 minutes, and you’ll see the counter on the display counting up 5)
- At this time you could decide whether you want to do a natural or quick release for the remainder of the pressure.
- If you would like to thicken the sauce, remove all the content from the pot except for the liquid. In a small cup or bowl, mix 2 tablespoons of cornstarch with 2 tablespoons of cold water, mix well until you don’t see any lumps.
- Turn the instant pot to sauté mode.
- Slowly drizzle the cornstarch slurry into the liquid while stirring.
- Keep stirring until the sauce comes back up to a boil and to the thickness you desired.
